Lemon and Coconut Bliss Balls

One afternoon my sister and I were playing around in the kitchen and came up with this beautiful recipe. It was so much fun adding new things to the recipe to come up with what we think is a lovely combination of sweetness and acidity. This recipe is perfect for those afternoons when you just want a little kick of energy and sweetness to get through the afternoon. The lemon also makes these so fresh!

 

 

RECIPE (makes 14)

 

INGREDIENTS:

½ cup pitted medjool dates

½ cup macadamia nuts

1 cup coconut flakes

1 tbsp vanilla extract

½ tsp pink Himalayan salt

1 tbsp coconut sugar (Panela would also work well)

3 tbsp lemon juice

¼ cup desiccated coconut

 

METHOD:

1. In a food processor blitz together the dates, macadamias, coconut flakes, vanilla extract, salt, coconut sugar and lemon juice. The texture should resemble a thick paste that can be rolled into balls.

2. Roll the mixture into tbsp. sized balls.

3. Coat the balls in the desiccated coconut and place on a lined tray.

4. Allow to set in the fridge for an hour before transferring the balls to an airtight container. They are able to be stored in the fridge for up to a week (if they last that long, my batter barely made it to the fridge hehe).

 

TIP: If the mixture is too loose, add a bit more coconut. If the mixture is too thick, add a tbsp. of water. 

ANOTHER TIP:  These are sooo delicious when they are frozen!!
