Fish tacos are one of my favourite dinners to share with my family. It is a chance for everyone to get super creative with what they want in them and what they want on the side. I am a simple person, so I am more than happy with some avo and a beautiful salad on the side. I have kept this recipe really simple so that YOU can have a play with what you want to put in them! I hope you try this one out, they are delicious if I do say so myself!
RECIPE (serves 4)
500g whiting fillets
2 tbsp melted coconut oil
1 tsp ground cayenne pepper
1 tsp ground cumin
1 clove crushed garlic
1 tsp salt
Juice of one lime
8 taco shells
Juice of half a lemon
½ tsp salt
In a large bowl mix together the whiting, coconut oil, cayenne pepper, cumin, garlic, salt and lime juice.
Preheat a non-stick pan over high heat.
Put the taco shells on a tray and put in a 180C oven for eight minutes.
When the pan is hot, add the fish. Cook for about two minutes on each side or until completely cooked through.
In a small bowl combine all the ingredients for the avocado smash and set aside.
Evenly distribute the fish into the shells and top with the avocado smash.
TIP: You can experiment with different fish in this recipe. White fish such as whiting and flathead work particularly well because they hold their shape. You could also use the same spices on a fillet of barramundi or rockling.
