Chocolate and Peanut Butter Protein Balls

June 12, 2018

These are by far the best protein balls I have ever made! My brother described them as ‘chocolate spiders.’ When we were kids my dad would melt chocolate and peanut butter together and then mix in these crunchy Asian noodles. He would then arrange them into little clusters called ‘spiders’ and let them set in the fridge (delicious). These taste just like them!! (Side note - I'll leave a recipe link down below of chocolate spiders because I'm all about balance and they are amazing and so easy to make).

These protein balls are perfect post workout or as a little sweet treat after dinner or when you feel the afternoon slump start kicking in. I highly recommend making these ones, they are amazing and Bruno's new favourite!

RECIPE (makes 20)

INGREDIENTS:

1/2 cup cacao

1/4 cup vanilla protein powder (I used tropeka vanilla lean protein)

1/4 cup coconut oil

1/4 cup water

4 medjool dates

2 tbsp maple syrup

1/3 cup natural peanut butter

1 tbsp chia seeds

Pinch of salt

1/2 cup crushed peanuts

METHOD:

  1. In a food processor, place in all the ingredients except for the crushed peanuts.

  2. Pulse the ingredients until it forms a thick paste consistency. Be patient, it takes time to come together. If it is not binding, add another tbsp of water and continue pulsing.

  3. Roll the mixture into tbsp sized balls and coat them in the crushed peanuts.

TIP: These can be stored in the fridge and can last up to two weeks. I love frozen treats so I actually prefer them in the freezer.
