This recipe came along one day when I was feeling particularly creative and needed to use up a cauliflower we had in the fridge. I remember thinking to myself, “I wonder what that would taste like roasted with almonds?” Before I knew it I was adding turmeric and some raisins and it somehow became my mum’s favourite side. This one is definitely a family favourite! I love that it is all done in the one pan as well, which makes for super easy clean up. I really hope you try out this recipe!
RECIPE (serves 4 as a side)
2 cloves garlic, crushed
1 head of cauliflower
¼ cup almonds
¼ cup chickpeas
¼ cup of raisins
2 tbsp turmeric powder
¼ cup coconut oil
1 tbsp salt
Cut the cauliflower into 3 inch florets.
In a large nonstick tray place all the ingredients. Using your hands, mix together all the ingredients so that they are all well distributed over the cauliflower and the tray.
Bake uncovered in a 180C oven for 40 minutes or until the cauliflower has started to go golden on the outsides.
TIP: This recipe makes for the perfect addition to nourish bowls. I put it on top of a bed of rice alongside some roasted sweet potato and carrots drizzled with olive oil. You can also add some grilled chicken to make an easy weeknight dinner.
