Apple Raisin Porridge

Winter time is upon us which means it is time for porridge. I wanted to create a porridge that would come together in less than ten minutes (including cleaning time), making it perfect for a weekday morning. To me there is nothing better on a cold morning than sitting down eating a warm bowl of porridge while I work away on my laptop or read a book. I really hope you check this recipe out, you definitely won’t regret it!

 

RECIPE (serves 1)

Ingredients:

1/3 cup rolled oats

1/3 cup milk

2/3 cup water

1 tsp cinnamon

½ apple

2 tbsp raisins

1 tbsp chia seeds

1 tbsp psyllium husk (optional)

2 tbsp crushed walnuts

1 tsp honey

 

Method:

1. Place the oats, milk, water and cinnamon in a small saucepan over medium heat. Allow to cook for five minutes.

2. Grate the apple.

3. Add the apple, raisins, chia seeds and psyllium husk to the saucepan. Mix until it reaches your desired texture.

4. Pour the porridge into a bowl and top with the walnuts, honey and a dash more cinnamon.

 

Tip: Don’t feel like you are confined to the ingredients I used. This porridge would be just as delicious made with fresh pear, sultanas, dried apricots, almonds or any other combination your heart desires.
