Choc Mint Cookies

I was in a bit of a baking mood last week so I thought I would get creative with the things we had at home. I remembered we had a beautiful block of Pana Chocolate Dark Mint Chocolate and I felt like cookies so I thought mixing the two together was a great idea. I kept this really simple so that it could be made quickly. I absolutely love using Italian vanillina and lievito, it reminds me of my nonna’s biscotti but this recipe would be just as delicious with regular vanilla and baking powder. These make for a great afternoon treat with a hot cup of coffee. I have loved sharing these with my family this week. Definitely try these ones out!


RECIPE (makes 18 cookies)


1 cup almond meal

1/4 cup quinoa flour

1/4 cup raw cacao powder

1/2 packet pane angeli lievito (or 1 tsp baking powder)

1 packet pane angeli vanillina (or 1 tsp vanilla extract)

1/4 tsp sea salt

3 tbsp coconut oil, melted

2-4 tbsp maple syrup

1 tbsp almond butter (or nut butter of choice)

1 large egg

45g choc mint chocolate, chopped (I used pana chocolate)

1/3 cup chopped almonds



  1. Line a tray with baking paper.

  2. In a large bowl mix together the almond meal, quinoa flour, cacao powder, pane angeli lievito, pane angeli vanillina and salt.

  3. In a smaller bowl combine the coconut oil, maple syrup, almond butter and egg.

  4. Pour the wet ingredients into the dry ingredients and mix until combined.

  5. Add the chocolate and almonds into the mixture and mix until well distributed.

  6. Roll the dough into tablespoon sized balls, then flatten with your palm and place on a tray (a couple of inches apart from each other).

  7. Dip a fork into a shallow bowl with water and print each cookie once or twice depending on how you want them to look.

  8. Bake in a 180 degree oven for 15 minutes or until firm on the surface.
