Beef and Ricotta Patties

I am all about simplicity during the week. The reality is that some nights you just don’t have the time to put together a really fancy and extravagant dinner. I am always on the lookout for quick weeknight dinners that I can cook my family that are going to fill them up and nourish their bodies after a long day. I seriously can have these put together and cooked within 40 minutes. I love them on a bed of salad with some roasted sweet potato. We have also used the same recipe and put them into burger buns, perfect for kids. We make so many variations of these that I will continue to share with you.

 

RECIPE (makes 12)

Ingredients:

1 kg beef mince

¾ cup ricotta

1 egg

½ cup breadcrumbs

2 tbsp paprika

1 tbsp Italian seasoning

1 tbsp salt

 

Method:

  1. Mix all the ingredients together in a large bowl until well combined.

  2. Roll the mixture into twelve little balls and place them on a baking tray.

  3. Bake in a 180C oven for 25 minutes or until completely cooked through.

 

Tip: These can be put together and then popped in the fridge overnight to be cooked the following day. Alternatively, mum and I often make these into the patties and then freeze them. This is perfect when you know you will be pushed for time. Simply take them out to defrost in the morning and they are ready to go in the oven for dinner.
