Chocolate Chunk Cookies

Oh my gosh you need to try these ones out! The batter actually tastes like peanut butter M&Ms (a childhood favourite). These are so easy to put together and are a crowd favourite…the only downside is that when you live in a house with five people these kinds of things don’t last very long. They are perfect for the afternoons when you need a quick little ‘pick me up’ to push through some work in the afternoon. It is exam time now so I definitely rely on chocolate for optimal function! Give these ones a go, you won’t regret it!

 

RECIPE (makes 18 cookies)

 

Ingredients:

1 cup almond meal 

1/4 cup coconut flour 

2 tbsp coconut sugar 

1 sachet vanillina (or 1 tsp of vanilla extract) 

1 tsp baking powder

1/4 cup peanut butter

1/4 cup honey 

1/4 cup coconut oil, melted

1 egg 

100g 85% dark chocolate 

 

Method:

  1. Mix together the almond meal, coconut flour, coconut sugar, vanillina and baking powder in a large bowl.

  2. In a small bowl mix together the peanut butter, honey and coconut oil. When the mixture is well combined add it to the dry ingredients. Add the egg.

  3. Mix all the ingredients until well combined.

  4. Chop the dark chocolate into large chunks.

  5. Add the chocolate to the cookie dough and mix until well distributed.

  6. Line two baking trays with baking paper.

  7. Roll the mixture into tablespoon sized balls and place them on the tray (about two inches apart). Press down each ball so it resembles a cookie. 

  8. Bake in 180C oven for 20 minutes or until just golden on the top.

    Store in an airtight container in the pantry.
