Christmas Caprese Salad

This is one of my family favourites around this time of year (or any time of year let’s be honest). It is so simple and easy to put together and looks so festive. This recipe is merely a guide, feel free to double it or triple it for the amount of people that you will be entertaining. This will be the final recipe for the Christmas season so if there are any recipes you would like to see over the course of summer let me know and I will do my best to create it for you! RECIPE (serves 5 as a side)


The salad

2 large buffalo fior di latte, sliced

2.5 cups of sliced large tomatoes

½ cup cherry tomatoes, halved

½ cup fresh basil leaves

Sprinkle of salt


The dressing

1/3 cup almonds

2/3 cup olive oil

½ cup fresh basil leaves

1 tsp salt



  1. Toast the almonds either in the oven or on a pan until golden brown.

  2. In a food processor place all the ingredients for the dressing (almonds, olive oil, basil leaves and salt).

  3. Pulse until the almonds are in small pieces. the dressing should be quite loose.

  4. Arrange the large tomatoes around the outside of the serving board followed by a piece of fior di latte and a piece of basil. Place the cherry tomatoes in the centre with a few more basil leaves and leftover fior di latte.

  5. Sprinkle the salad with salt.

  6. Drizzle half the dressing over the top. The remainder can be stored in a jar in the fridge for up to a week.
