Blueberry and Cashew Bowl

My dad has been requesting a different flavoured bowl every morning. This has allowed me to be quite creative in the kitchen. He doesn’t really mind what I put in it as long as it tastes delicious! This is a super simple combination that tastes so creaming and delicious! Bowls like this are a staple for me in summer so I will definitely be sharing some more variations over the coming months. I make this for my dad the night before and keep it in the fridge so it is all ready to go for him when he wakes up. This is also a great one to double the recipe and share with a loved one or to keep for a couple of days in the fridge for you! RECIPE (Serves 1)

 

Ingredients:

1.5 cups ice

½ banana, frozen

¼ cup blueberries, frozen

1 serve protein powder (I use Tropeaka, Lean Salted Caramel)

2 tbsp chia seeds

1 tbsp psyllium husk

1 tsp maca powder

1 heaped tbsp cashew butter

1 cup water

½ cup cashew milk

 

Method:

  1. Place the banana, berries and ice into the blender cup followed by the water and cashew milk.

  2. Add the remainder of the ingredients and blend until it reaches the texture of soft serve ice-cream. If it is not blending just add water until it reaches the desired texture.

  3. Top it with your favourite toppings – Get creative here, I love toping mine with oats, buckinis, cacao nibs, goji berries, sunflower seeds, pepitas and coconut flakes.
