One of my favourite cereals growing up was Crunchy Nut. Truthfully, I would eat it straight out of the bag as a snack. I wanted to create my own version at home that didn't contain all the added sugar but still captured the essence of this unbelievably delicious cereal. My family are absolutely loving this one (eating it out of the container). My sister has been eating it with coconut yogurt and a banana in the morning for breakfast and my brother has loved it as his afternoon snack. This is so quick and easy to make and a great one to have for those mornings you just don't have time. I used salted peanuts in this recipe, if you don't have any just add a pinch of salt to the mixture to balance out the sweetness of the honey. Enjoy!
RECIPE (makes 3.5 cups of granola)
2 cups oats
1 ½ cups salted peanuts
½ cup coconut oil, melted
½ cup honey
½ cup natural peanut butter
In a small bowl, mix together the coconut oil, honey and peanut butter. Set it aside.
Put the oats and peanuts in a large bowl and mix until combined.
Add the wet ingredients to the oats and peanuts. Mix well until all the oats and peanuts are well coated.
Line two flat trays with baking paper.
Pour the mixture onto the trays, spreading it out into a single layer.
Bake in a 180C oven for 30 minutes, mixing it around every few minutes for even cooking.
Storage: Store in an air tight container or jar for up to a couple of weeks (but it won’t last that long).
