I feel like I share a picture of these in my Instagram story every week and I thought it was finally time to share the recipe. These are my favourite addition to any salad I am making. They are so quick and simple to make and store really well in an airtight container. Like with so many of my recipes, I want to encourage you to get creative with the spices you have on hand. Mix and match what you have, you never know what you might come up with! These are delicious even as a snack in an airtight container if a craving for something salty comes on in the afternoon! Recipe (Serves 4 as a side)
800g canned butter beans (2 cans)
1 tbsp fennel seeds
1 tbsp dried oregano
1 tbsp dried basil
1 tsp granulated garlic
1.5 tbsp salt
¼ cup olive oil
Line a flat baking tray with baking paper.
Drain and rinse the butter beans.
Pour the butter beans onto the tray.
Sprinkle the fennel seeds, oregano, basil and garlic over the butter beans.
Massage the spices into the butter beans until well distributed.
Lay the butter beans in a single layer.
Drizzle over the olive oil.
Bake in a 180C oven for 45 minutes to 1 hour or until crispy.
