Hazelnut and Almond Bars

This is another one of my recipes that came along by accident. I was attempting to make hazelnut butter with cacao and got this instead! This is my brothers new favourite bar and it has been requested since the first time I made it. These are a fantastic on the go snack and make for a beautiful addition to a bowl of coconut yogurt with fresh berries. I really hope you give this a go and if you do please send me a picture because I would love to see!

 

RECIPE (Makes 16 bars)

 

Ingredients:

2 cups hazelnuts (roasted)

1 cup almonds (roasted)

3 tbsp maple syrup

2 tbsp coconut oil

1 tsp salt

1 tsp vanilla

1 cup medjool dates

3 tbsp raw cacao

 

Method:

  1. In a food processor, blend together the hazelnuts and almonds until they form a fine crumb.

  2. Add in the maple syrup, coconut oil, salt, vanilla, dates and cacao.

  3. Blend until it forms a thick batter.

  4. Line a brownie tray with baking paper.

  5. Pour the batter into the tray and flatten it out into a single layer with a spatula.

  6. Place in the freezer for a few hours to set.

  7. Remove from the freezer and allow to come to room temperature before cutting into squares.

  8. Store in the fridge or freezer for up to two weeks.
