This is another one of my recipes that came along by accident. I was attempting to make hazelnut butter with cacao and got this instead! This is my brothers new favourite bar and it has been requested since the first time I made it. These are a fantastic on the go snack and make for a beautiful addition to a bowl of coconut yogurt with fresh berries. I really hope you give this a go and if you do please send me a picture because I would love to see!
RECIPE (Makes 16 bars)
2 cups hazelnuts (roasted)
1 cup almonds (roasted)
3 tbsp maple syrup
2 tbsp coconut oil
1 tsp salt
1 tsp vanilla
1 cup medjool dates
3 tbsp raw cacao
In a food processor, blend together the hazelnuts and almonds until they form a fine crumb.
Add in the maple syrup, coconut oil, salt, vanilla, dates and cacao.
Blend until it forms a thick batter.
Line a brownie tray with baking paper.
Pour the batter into the tray and flatten it out into a single layer with a spatula.
Place in the freezer for a few hours to set.
Remove from the freezer and allow to come to room temperature before cutting into squares.
Store in the fridge or freezer for up to two weeks.
