Snickers Smoothie Bowl

This is by far one of my favourite smoothie combinations!! Chocolate and peanut butter are a winning combination and with the dates it actually takes like a snickers. This is fantastic if you are pushed for time in the morning and you just need something quick and easy to blend together. You can even portion out the dry ingredients in this recipe so that in the morning you can just add it to the ice, water, milk, banana and dates. This is perfect with my Crunchy Snickers Granola (I have put that recipe down below for you) or even just some oats. If you do make this, please send me a picture because I would love to see!

 

Ingredients:

1.5 cups ice cubes

1 cup water

1 cup coconut milk

1 banana, frozen

2 dates

1 serve vanilla protein powder (optional)

1 tbsp peanut butter

2 tbsp cacao

1 tsp maca powder

1 tbsp psyllium husk

2 tbsp chia seeds

 

Method:

  1. In a blender add in the ice, water, coconut milk and banana followed by the remaining ingredients. This is to ensure that the chia seeds don’t get stuck to the side of the blender.

  2. Blend until thick and smooth.

  3. Pour into a bowl and top with your favourite granola, oats or (and highly recommended) my snickers granola – recipe below).

 

Crunchy Snickers Granola

 

Ingredients:

1 cup rolled oats

1.5 cup buckwheat

1/3 cup cacao powder

2/3 cup unsalted peanuts

1/2 cup chopped dates

1/4 cup chopped dark chocolate (I used Loving Earth Dark Chocolate)

1 tbsp maca powder

2 tbsp chia seeds

Pinch of sea salt

1/3 cup maple syrup

1/3 cup coconut oil

 

Method:

  1. Line a baking tray with baking paper.

  2. Mix all the ingredients together in a large bowl until well combined.

  3. Pour the mixture onto the tray.

  4. Use a spatula to spread the mixture into a single layer.

  5. Bake in a 180C oven for 20 minutes.

  6. Allow to cool completely before placing into a container or jar for storage.
