Sweet potato has always been a vegetable I love but over the past few weeks I have found myself utterly obsessed. It is the only vegetable that I really crave day after day. I have been feeling so run down with uni the past couple of weeks so I think my body is just craving the energy that sweet potato provides me with. In terms of key nutrients, sweet potato are an excellent source of vitamin A, vitamin C, vitamin B6 and fibre. There are endless ways that you can prepare sweet potato but for me, nothing beats roasted sweet potato. In terms of meal prepping, this is my go to!
Sweet potato pairs well with a number of different spices so I will place a few of my favourite combinations for you below! I know that roasted sweet potato is nothing revolutionary, but it is really simple and delicious which is what I am all about on a week night.

RECIPE (Serves 4 as a side)
2 large sweet potatoes, washed
1/4 cup olive oil
1.5 tbsp salt
Preheat oven to 180C.
Chop the sweet potato into 3cmx3cm cubes (or whatever size you like!).
Put the chopped sweet potato in a large non-stick baking tray along with the salt and olive oil.
Massage all the ingredients together.
Bake for 40-45 minutes or until completely cooked through and lightly golden.
Making the recipe your own:
At the time when you add in the salt and olive oil you can get really creative! My favourite spice combinations are:
1 tbsp paprika and 1 tbsp of ground cumin
Simply 2 tbsp paprika
1 tbsp paprika, 1 tbsp cumin, 1 tbsp ground coriander seeds
1 tbsp cinnamon (trust me)
1 tsp paprika, 1 tsp ground cumin, 1 tsp cinnamon, 1 tsp nutmeg, 1 tsp cardamom
1 tbsp oregano, 1 tsp dried thyme, 1 tsp dried parsley
1 tbsp dried rosemary (soooo good)
