Lightly Salted Mixed Nuts

I wasn’t even going to put this up as a “recipe” but recently I have had a few requests for a simple post about this! This snack was inspired by my mum who always loves to have a salty snack handy on the couch. This is a great way to use up the nuts you might already have lying around and is also a fantastic way of limiting salt intake. When we purchase salted nuts we don’t actually know how much salt is in them. This way, you can control that.

 

This snack is something that can be made in bulk and stored in jars for a few weeks. I really hope you try this out and as always, if you do make it please send me a picture because I would LOVE to see!

 

RECIPE Makes (3.5 cups of nuts)

 

Ingredients:

3 ½ cups of nuts (I used a combination of almonds, cashews, walnuts, brazil nuts and pecans)

¼ cup olive oil

1 tbsp salt

 

Method:

  1. Line a large tray with baking paper.

  2. In a large bowl, mix together the nuts, olive oil and salt.

  3. Pour the nuts onto the tray and spread them out into an even layer.

  4. Bake in 180C oven for 25-30 minutes or until the nuts are a deep golden brown colour.

  5. Remove from the oven and allow to cool before storing in jars.
