Banana and Date Muffins

So the plan was to stop putting pressure on myself to come out with new recipes every week,,, but I honestly can't help myself! Sharing recipes is just what I do and it honestly fills my heart with so much joy when I hear that people are recreating them for their loved ones. This recipe came about from a classic thought pattern of mine,  "I have so many ripe bananas and need to do something with them." I have been craving something sweet so I thought dates was the obvious choice here! These honestly are so so delicious and I just had to share the recipe with you! It would also work well with chocolate chips or raisins in place of the dates. As always use what you already have, you will be amazed with the combinations you can come up with. Recipe (makes 12) 



2 ripe bananas, mashed 

1/3 cup maple syrup

1/3 cup coconut oil 

1 egg 

2 tsp vanilla extract 

1/2 cup peanut butter 

1 1/2 cups almond meal

1 cup buckwheat flour

1 tsp baking powder

2 tsp salt

2 tbsp mixed spice 

5-6 medjool dates, chopped 



  1. Preheat oven to 180C. 

  2. Line two muffin trays with patty pans   

  3. In a large bowl, mix together the bananas, maple syrup, coconut oil, egg, vanilla extract and peanut butter. 

  4. Add in the almond meal, buckwheat flour, baking powder, salt and mixed spice.

  5. Mix until well combined. 

  6. Fold in the medjool dates.

  7. Distribute the batter evenly into the patty pans.

  8. Bake for 20-25 minutes or until completely cooked through.
